Hickory Smoked Prime RibPrime Rib. Smoked, seasoned, and juicy. Tired of paying $35 for a high quality Prime Rib? Try this amazingly simple recipe! You’ll be cutting and enjoying GREAT Prime Rib in 3-4 hours.

Seasoning / Prep:

Pour Worcestershire Sauce on, then mix the following and cover:

1/3 cup Salt
1/4 cup Pepper
2 tbps Cumin
2 tbps Paprika
1 tbps Orengo
1 tbps Garlic Powder

Cooking:

45 minutes at 425 degrees, with Hickory Smoke
2-3 hours at 325 degrees, depending on size. Generally 20 minutes per pound.

Rest for 3 minutes, or until at desired internal temperature

Cut, and serve warm.

  1. How much hickory do you use to smoke this? Can you show your charcoal basket set up?

    • Howdy,

      I use the hickory wood chunks you can find in bags at Home Depot, Meijer, or Walmart. For this one, a full stack lit on top of a full basket, however, it was a bit overkill on the unlit. I think you could away with half a basket, and then put in 3 good sized chunks. I neglected to get a shot of my basket, and its raining out right now. I’ll get you a picture of how it should look as soon as I can.

    Here’s a couple pics of my charcoal setup. For the wood, I put 3-4 chunks on top, and 1-2 around it on the unlit part for the long 12+ hour smokes. For shorter, just 2-3 chunks.

    The second picture, I made a slight “ditch” in the top to set the lit coal in. 1/2 chimney lit on top.
